Easter Egg Hunt
Tonight we had our annual Easter Egg Hunt. We were so glad to have Ty, Trace, Jeff, Kelsey, Jenn, and their families all with us. The kids had a great time. They got to go to their little area where Papa hid their eggs. We are happy that even the big boys still like it. We have such a wonderful family. We are so blessed.
We grilled hamburgers and Jenn made some great beans. Of course, we had to have some sugar cookies to go with. Hope this is a nice week for everyone and you all enjoy the Easter weekend. It is such a special holiday. Love you all........

Fun with Lindsay, Morgan, and Maximus
What a great time we had with Lindsay and Morgan and Max! We were able to celebrate an early birthday with Max. I can hardly believe that he is going to be two years old. What a beautiful home Lindsay and Morgan have made in Glendale. They are doing such a great job with their cute little guy. Thanks for your hospitality! We really enjoyed sunning and shopping with you! Can't wait to get back there!!!

This past week has been a very hard one for us. A week ago yesterday our dear sister, friend, mother, daughter, and wife left us. Pam Zundel ended her three year battle with cancer after living a life filled with service and love. She has been an amazing example of courage and optimism and faith. She will be greatly missed by everyone, especially her wonderful family. They served her so well and were taught by her til the very end. We were able to attend her funeral and hear many wonderful testimonies of her service to her fellow men. Craig did a wonderful job of teaching us about the plan of salvation and her children paid beautiful tribute to her today at a graveside service in Brigham City where she will rest. I believe that Pam has been close by these last few days and was so pleased with all that was said and done. Included are some lighter moments from the day.
Recipes
Chimichungas
Need: 1 lb ground beef, 3/4 c chopped onion, 3/4 c slieced green bell pepper, 1 1/2 c corn, 2 c taco sauce, 2 tsp. chili powder, 1 tsp. garlic salt, 1 tsp cumin, 16 oz refried beans, 8 flour tortillas, shredded cheese, 1 Tbs butter
1. Preheat oven to 350 degrees
2. Brown ground beef in a skillet over med-high heat. Add onion, bell pepper, and corn. Cook about 6 mins or until vegetables are tender. Stir in taco sauce and season with chili powder, garlic salt, and cumin, stirring until blended. Cook until heated through then set aside.
3. Open can of beans and warm in microwave. Spread a tin layer of beans onto each tortilla. Spoon beef mixture down center then top with shredded cheese. Roll up tortilla and place seam side down onto baking sheet. Brush with melted butter.
4. Bake 30-35 mins. or until golden brown.
Enchiladas
need: 1 lb ground beef, 1 sm onion, 1 can tomato soup, 1 can mild enchilada sauce, 8 oz flour tortillas, 2 c cheddar cheese
1. Cook beef and onion until golden brown. Drain
2. Stir soup and enchilada sauce into meat. Spread 1/4 C meat mix onto each tortilla. Sprinkle tortillas evenly with 1 C cheese. Roll up tortillas and place seam down in a greased 9x13 baking dish. Pour remaining meat mix over tortillas.
3. Cover and bake at 350 degrees for 20 mins.
4. Uncover and sprinkle with remaining 1 c cheese and bake an additional 5 mins.
