Blue Ribbon Lasagna


2 lbs. Ground Beef
2 Tbsp. Minced Onions
1 Can (28 oz.) Whole Tomatoes
2 Cans (15 oz. each) Tomato Sauce
2 Cans (6 oz. each) Tomato Paste
2 Bay Leaves
2 Tbsp. Oregano
2 Tbsp. Parsley
2 Tbsp. Basil
6* Cloves Minced Garlic
1 tsp. Salt
dash of Pepper
9 Lasagna Noodles
16 oz. Cottage Cheese
2 Eggs
1 Lb. Grated Mozarella Cheese
1 Lb. Grate Monterey Jack Cheese
2 Cups Grated Parmesan Cheese

Start to Saute minced garlic and onions in pan- but without butter. Add Beef. Brown. Stir in Whole Tomatoes (entire can- just pour in), Tomato Sauce, Tomato Paste and Seasonings. Simmer for 2 1/2 hours.
Cook the 9 Lasagna noodles according to package directions. Drain.
Combine Cottage Cheese with 2 eggs.
Grease 9x13 & 9x9 pans.
Layer: Noodles, Meat, Cottage Cheese Mixture, Grated Mozarella and Monterey Jack Cheeses (mix them a bit), repeat. Top it off with the Parmesan Cheese.

Bake at 350 for 45 mins. or until the top is golden and crispy.

I know, I'm trying to cook different things, it's hard, though, especially when I hate things like cottage cheese, sour cream, etc.....

I know what you mean. I actually make the stroganoff with the cream of mushroom. EW! But I really have grown to love sour cream (I think it all started with that yummy Sunday Chicken in the Crock Pot!)
Hope they turn out for ya. The lasagna is so dang expensive to make, and it makes a ton. That's why it's so handy to be able to freeze things! :)
